Ingredients:

For the Salad:

  • 1 large head of romaine lettuce (washed and chopped)
  • 1 cup croutons (store-bought or homemade)
  • ½ cup grated Parmesan cheese

For the Dressing:

  • 2 cloves garlic (minced)
  • 2 anchovy fillets (optional, but traditional)
  • 1 large egg yolk (or substitute with mayonnaise for safety)
  • 1 tablespoon Dijon mustard
  • 2 tablespoons lemon juice (freshly squeezed)
  • 1 teaspoon Worcestershire sauce
  • ½ cup olive oil
  • Salt and pepper to taste

Instructions:

Step 1: Prepare the Lettuce

  1. Wash the romaine lettuce thoroughly under cold water.
  2. Dry the leaves using a salad spinner or paper towels.
  3. Chop the lettuce into bite-sized pieces and place them in a large salad bowl.

Step 2: Make the Dressing

  1. In a small bowl, mash the minced garlic and anchovy fillets together until they form a paste.
  2. Add the egg yolk (or mayonnaise), Dijon mustard, lemon juice, and Worcestershire sauce. Whisk to combine.
  3. Slowly drizzle in the olive oil while continuously whisking until the dressing emulsifies and thickens.
  4. Season with salt and pepper to taste.

Step 3: Assemble the Salad

  1. Add the croutons and half of the grated Parmesan cheese to the bowl with the lettuce.
  2. Pour the dressing over the salad, starting with a small amount and adding more as needed.
  3. Toss the salad gently to coat the lettuce evenly with the dressing.

Step 4: Serve

  1. Transfer the salad to serving plates or a large platter.
  2. Sprinkle the remaining Parmesan cheese on top.
  3. Add optional toppings like grilled chicken, shrimp, or bacon if desired.
